History
Lucia was 6 years old when she moved from Bucaramanga to Huila, there she grew up surrounded by coffee farms, appreciating the work of the coffee grower to harvest and choose the best cherry trees from the coffee plants that would be transferred from those beautiful mountains 2,000 meters above sea level. sea to the farms to be fermented and processed, obtaining the beans that would be used to make and serve the best cups of coffee to be drunk throughout the world.
Miguel finished his studies in the United States and was hired by the largest private company in the world to work in the coffee division in Peru, Colombia and the United States. In fifteen years working in the coffee trade, he not only traveled the world visiting impressive coffee-growing areas, but also had the opportunity to try, enjoy and fall in love with the great coffees of Jamaica, Colombia, Peru, El Salvador, Hawaii, Kenya, Ethiopia and more.
Miguel and Lucia married in Bogotá in 2003 and after seven years living in New York where Luciana, their eldest daughter, was born, they decided to move to Peru, where their second and third daughters, Michela and Valeria, were born.
NOS represents what WE are, a family raised under the values and teachings of our parents. NOS represents the fruit of two different but similar cultures. NOS is the union of two passions that brings together the best of two lives, two experiences, two achievements to give fruit to something even better.
The support of great professionals, producers and friends from the world of coffee growing in Peru and Colombia was key to identifying the perfect regions and producers for our coffee and in turn, we have selected the ideal varieties to achieve incomparable blends. This is how NOS was born, with four unions that give us quality and consistency in a cup of coffee, four unions that give us the best that the coffee world has to give us.
Our Coffees
The birth of the four NOS blends was a months-long process that began with the analysis and tasting of 100% Arabica coffees from different regions of Peru and Colombia. More than 100 specialty coffees from the main regions of both countries with scores greater than 85 SCA points were analyzed and cupped by Colombian and Peruvian Q Graders certified by the Specialty Coffee of America, Mrs. Lourdes Córdova, main judge of national coffee competitions, Miguel Viacava and Lucia Calvete.
Eleven Colombian coffees from producers located in Huila, Tolima, Antioquia and the Sierra Nevada de Santa Marta along with ten Peruvian coffees from producers in Oxapampa, Pichanaki, Satipo, Huánuco, Cutervo, Pangoa and Chirinos: were chosen for the final tasting and selection of mixtures carried out in the laboratory of the Peruvian Chamber of Coffee Cacao where the eight coffees were selected to be used for the 2023-2024 NOS harvest.
Quality and Consistency
The big question after selecting the origins and varieties that will be used to offer these wonderful coffees is how we manage to maintain quality and consistency over time. In Peru, today, we have a very good supply of specialty coffees that has been growing rapidly and helping to create a coffee culture in line with the efforts of a large part of our coffee growers. The big problem is that many of the coffees that the best roasters offer us come from small productions and it is difficult, if not impossible, to find them consistently in points of sale, cafes or restaurants.
NOS has managed to put together a purchasing and logistics system in Peru and Colombia that will guarantee the supply of the eight selected coffees throughout the 2023-2024 coffee year.
Thanks to our commercial agreement with the company Coffee Roasters SAS and our company Lumiria Coffee Roasters, we have warehouses for parchment and green coffee with humidity and temperature controls in Neiva (Huila), Ibagué (Tolima) and Lima where the grain will arrive according to the Production needs.
The commercial division of our company has purchased the volumes necessary for our production from the eight coffee growers who supply us, using price hedging systems linked to the options and futures markets of the Chicago commodity market to guarantee them the best price available for their product throughout the coffee year.
It should also be noted that our venture does not require producers of any type of certification such as organic, fair price, rain forest, etc. since these certifications in most cases bring high costs to the producer and the awards they receive are insufficient, with the only beneficiaries of these processes being the certifiers and roasters. The producers chosen by NOS work hard to deliver the best that their land, effort and processes can offer and we accompany them by guaranteeing quality and consistency during the logistics and roasting of our coffees.
Operation Underground Railroad
The film Sounds of Freedom showed us the darkest side of the child trafficking mafias in the world, these directly affect boys and girls in the coffee-growing areas of Peru and Colombia. Operation Underground Railroad leads the fight against human trafficking and sexual exploitation around the world. Their work knows no limits: they go to the darkest corners of the world to help law enforcement free anyone in the clutches of exploitation and strive to ensure the continued recovery and aftercare of all those affected. While their focus has always been children, they continue to fight for the liberation of anyone suffering at the hands of those who seek to exploit. They provide vital resources to law enforcement around the world, and work tirelessly to raise awareness and prevent these crimes.
